


Guanciale
The Guanciale is a cold cut which is obtained from the pork cheek, a piece of meat made of lean parts (from facial muscles) and from a prestigious fat component. It is salted and aromatized with black peppercorn and powdered Calabrian chili. Hung in controlled environments in order to provide a better conservation of the organoleptic quality, the Guanciale is left to season for a minimum of 90 days. Our Guanciale is gluten- and dairy-free.
