


Mild red soppressata
The Soppressata is the most noble amongst Calabrian sausages because it is obtained by processing the leanest, nerve-free, pork meats, ham and filet, with the addition of the best lard coming from the front part of the loin. Chopped coarsely and aromatized with Calabrian red sweet chili, the meats are bagged in natural pork guts, pierced and hand-tied with natural twine. Time of seasoning of about 45/60 days. Our soppressate are gluten- and dairy-free.
