Battened Prosciutto

Our prosciutto crudo is obtained from the ham of our national heavy pork and is processed following antique traditional recipes. After a long seasoning time, it is plastered with lard or covered with flaked spicy chili. The cut presents a nice red color with pin coarse plots. The smell is intense, whilst the flavor is delicate.
