White chain sausages

The sausage is the most popular cold cut of the Calabrian tradition and it is obtained from pork shoulder and belly. Mid cut chopped, kneaded and flavored with fennel seeds, the meats are bagged into natural guts, pierced and hand-braided, then tied up with a natural string, giving them the characteristic shape of a chain. The seasoning, which takes place in environments with controlled temperature and humidity, lasts for a minimum of 30 days. Our sausages are gluten- and dairy-free.
