Our battened bacon, after the salting phase, is rinsed with water and wine vinegar and covered on the external surface with powdered Calabrian chili pepper. The seasoning takes place in environments with controlled humidity and temperature for a minimum of 30/50 days. Our Battened Bacon is gluten- and dairy- free.
