PDO Calabrian Soppressata

The PDO Calabrian Soppressata, available in the white version, both mild and spicy, is the most noble cold-cut, as it is obtained by the processing of the leanest, nerve-less pork meats, the ham and the filet, with the addition of the best lard, derived from the front part of loin. Mid-cut chopped and aromatized with black pepper in grains or Calabrian chili, hot or sweet, the paste is bagged in natural gut, pierced and hand-tied with natural thread. The time of seasoning varies from 50 to 60 days.
