



PDO Calabrian Soppressata
The PDO Calabrian sausage, available in the white version, mild or spicy, is obtained by the mixture of meats, mid-cut chopped, obtained from the shoulder and the under-rib of pigs bred in Calabria. Aromatized with fennel and Calabrian chili, hot or sweet, are bagged in natural guts. Hand braided and tied with natural twine, they are left to season for a minimum of 30 days.
